I love beets, too! Don't understand why they're so maligned by so many. I've never tried roasted them. I imagine it might be even more nutritious than boiling or steaming.

Made this recipe on Tuesday--ah-mazing. I added coined carrots and diced roasted chicken breast, which were fantastic, but the core flavors of the deep-cooked mushrooms can't be beat. In fact, the whole supply (and this makes quite a bit of soup) was gone by Thursday, and I'm making it again this morning by request from my wife. Thanks, Kate!

Thanks for the recipe - I am trying to make use of our big Meyer lemon harvest (one tree only, but this year, it has a LOT of lemons on it).

I have a four year old that will hardly eat any fruit or vegetables (sometimes she won't even eat sweets!) but she will eat mushrooms. The soup looks amazing and will definitely be trying it, hopefully very soon, because if not in a few days the weather looks to be in 80s and then I will have to wait till it gets cold again. The recipe looks simple too and that is a big plus with three kids running around. Thanks so much!
