Cranberry and orange is a classic combination, and even the thought of it brings me swiftly back to Christmas as a child when my Mom would pull out her superbly old hand-cranked food grinder and clamp it to the counter edge to make a fresh cranberry-orange relish that filled our kitchen with the lively tang of oranges and the tart haze of cranberry. My sisters and I loved standing at the counter turning the crank of that grinder while Mom fed whole cranberries and oranges into the hopper, the pop and crunch of the fruit filling our ears while the mouth dripped it’s ruby mass into the bowl underneath. It was the scent of the holiday for us, more than a fresh ham baking in the oven, better than her scratch mincemeat or a simmering apple pie. I can zest an orange in the burning July sunshine, wearing shorts and a tank-top, and I will immediately be transported back to wintertime, as a kid again in Mom’s kitchen, fighting my sisters for a turn at the grinder. Back then, the tart cranberries were not to my liking, but I absolutely adored that smell.
The mix of cranberry and orange seems to be everywhere right now, and for good reason as fresh cranberries are in season. For some delicious winter baking, I grabbed it with both hands and enjoyed the promise of greatness found in this match.
There were scones first…..
I had to backtrack to find out exactly where this recipe came from, but thankfully came across it on LoveFeast Table so I can be sure to give proper credit. I’ve linked the recipe for you because I seriously suggest you make yourself a pan of these before too long. The flavors speak of winter, they require you to pour a steaming coffee to sip alongside, and will make you smile happily with delight. We all need that in the chilly months ahead. This past year has been a big one for me in terms of muffins and scones. I like being able to put together a batch if the moment seems right, and you really can’t lose with anything that has some semblance of chocolate in it. Even when the chocolate is white. And these scones are tender, moist and airy. You’ll never purchase a coffee shop hockey puck again.
Then, even while there were still a few scones left over, I forged into a Cranberry Date and Orange quick bread to bring to one of our Christmas gatherings. It was so hard for me to wrap these loaves and slip them in the freezer to await our celebration, because when I knocked them out of the pans to cool, the smell that rose from them reached into my nose and tickled it immensely. I had to walk out of the kitchen in order not to rip a chunk off one to sample. Thankfully, we ended up with plenty of leftovers.
CRANBERRY DATE ORANGE BREAD
2 c. all-purpose flour (I used half whole wheat)
3/4 c. sugar
1 1/2 t. baking powder
1 t. baking soda
1/2 t. salt (I started using sea salt in baking and I love the results!)
1 egg
1/2 c. orange juice
Grated peel of 1 orange
2 T melted butter or margarine
2 T. hot water
1 c. fresh or frozen cranberries
1 c. chopped dates
1 c. coarsely chopped walnuts (or pecans- but either is optional)
Heat oven to 325°. Spray a standard 9×5 loaf pan with cooking spray and set aside.
In a medium saucepan, combine cranberries, dates, water and butter. Heat to a low simmer, stirring occasionally and cook for about 5 minutes. Some of the berries should start popping but you want them to retain their shape as much as possible. Turn off the heat and stir in the orange juice and zest. Allow to cool until barely room temperature.
In a large mixing bowl, combine dry ingredients. Beat egg separately. Add egg and cranberry mixture to dry ingredients, stirring just until moistened. Fold in nuts, if using. Spoon into prepared loaf pan. Bake for 60 minutes or until toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack.

I’m not sure whether I feel sadness or relief that Christmas is over.
Some years, it’s a combination of both.
This year it seems to be more relief, as I struggled to bring the holiday forefront in my life. I am more eager for this coming New Year’s Day. I’ll be happy to throw out the last calendar page of 2009, thinking this month I might rip it into tiny pieces before fluttering them into the recycle bin, watching the last of a year to forget slip through my fingers. Maybe the metaphorical shredding will empty my heart of the effects of too many trials and ongoing stress. I’ll keep my fingers crossed for that.
Our Christmas celebrations were nice, as they always are. There was plenty of good food and family time. There was lots and lots of snow, Minnesota-style. We even had some rain, which led, of course to ice and then on top of that, more snow. I love how when I look out over a fresh snowfall, I feel giddy again like I did as a kid. It’s nice to feel that sense of wonder still inside me.
The more adventurous of our two cats had enough curiosity to venture onto the front steps, but that was about it. The sound of the snowblowers was a bit too much for him.
The Christmas celebrations had plenty of high points; my son, our little carnivore, got his fill of good meat, a gift in and of itself. We caught up on some much needed sleep and my sister-in-law gave me a beautiful, warm hand-knitted shawl that I am completely uninterested in removing from my shoulders any time soon. We’ll have a new niece or nephew any day now and the anticipation is very high. There is much to be joyful about, and this is no lie. Even in my pensive state I am well aware of the multitude of blessings that surround us. And I am here now, in the last few days of one year, a year I can’t imagine ever wanting to re-visit again, eagerly full of hope, mystery and the potential of something far better starting in the new year on Friday. I’ve always been in wonder over the fact that you can lay down to sleep on December 31st, and wake up to a whole new stretch of months ahead, a new numbered calendar year, a lineup of days, blank and exciting to make into what you wish. I remember being young, ushering in a brand new year, and unaware that life had the potential to keep kicking you after you’ve tripped and fallen flat. I always thought it should look different, that switch from one year to the next; I expected the new year to dawn bright and shiny, unblemished and superbly fresh, like that moment you step out of the bath. Wouldn’t it be wonderful to have the ability to place your burdens on the ground, the stroke of midnight imminent, and step over some magical threshold into 2010, closing the door and leaving them behind? Spiritually this is full of possibility. I hope to be able to do just that, the best I can this coming Thursday evening. I think about changes I wish to see in the coming year. I think about stress relief, smiling more, hoping more, praying more. I think about rising up to a better level of personal contentment, stretching my culinary wings, digging deeper, loving more fully, reaching out farther, accepting life more gracefully with less judgment. What’s the next step? The right step? Maybe my best option is simply to keep myself open to immense possibility.
And let’s talk about immense possibility, with regards to this Cornbread Stuffed Poblano Pepper.
I came across this idea while blog surfing one day and had yet another ‘Eureka!’ moment. If I recall correctly, we ate it for dinner that night and I was swirling with the potential of greatness to be found in this simple option. Like the New Year ahead, it’s bright with new promise and endless outcomes. I think about chunks of pork, mixed with green chile sauce and topped with cornbread mix nestled into a dark green pepper, baked to perfection and steaming hot, topped with avocado and a spot of sour cream. I think about chili beans too. Maybe spicy chicken pieces. I like thinking in terms of potential, for both my life in the 12 months coming rapidly my way, and for my food. It makes future endeavors seem much more delicious.
For your Cornbread Stuffed Poblano Peppers:
Buy as many poblano peppers as there are people to serve. Look for firm, unblemished peppers with as much roundness as possible, not the easiest option in a poblano. Heat the oven to 375° and cover a baking sheet with foil. Spray the foil with cooking spray. Slice the peppers the long way and trim out the core and seeds. Prepare your favorite cornbread recipe, reducing the liquid up to 1/3. A more dense cornbread won’t spill out of the peppers as it bakes. Jazz up the cornbread by adding a chopped jalapeno, or a 4-oz can of diced green chilies, some sharp cheddar cheese, a spoonful of minced chipotle peppers. Be creative with the additions. Spoon some of the cornbread mix into each pepper half, just enough to barely touch the top. Sprinkle extra cheese over the top. Any remaining cornbread can be baked as muffins, or any option you wish. Bake the peppers until the cornbread is cooked, about 18-20 minutes. Serve immediately.
A savory meat or bean layer underneath the cornbread strikes me as a delicious option for these, turning a healthy side dish into a delightful main course meal. Oh, the possibilities……..

Those Sugar Plums, the ones that dance in the head during the long winter slumber in the most familiar Christmas story that’s likely ever been written. How did I get to be this age, with a teenager and a husband, long gone away from treasured annual reads of that classic story each year, the retelling of Santa’s magical visit, and not have any clue what a real sugar plum entailed? I want to kick myself.
Because, I’ll tell you something, and this is no small truth. Had I known about these delightful, sweet and simple little treats prior to this past week, how easy they are to put together and how eager and surprised everyone looks when you pull out a container and say “These are Sugar Plums. Yes! THOSE Sugar Plums!” I’m telling you, it would be all I need and I’d have been cranking out these nutty fruit-filled, orange-scented orbs the moment the calendar page flipped over to the month of Christmas.
My hope now is that I don’t go so far into overkill that I never want to see a dried apricot again. The delight and flavor and simplicity of these might possibly have that effect on me. Good thing Christmas is just a few days away. It’s a bit embarrassing, really, to be so interested in food of all kinds, the history of it, the stories it can tell and not be aware of this confection. But that’s what we have friends for, isn’t it? To enlighten us? To share the wealth?
And little could be simpler than combining rough-chopped nuts and dried fruit in a food processor along with honey and orange juice and whirring it all into an utterly fragrant crush of flavor. Even the rolling of the mixture was contemplative, as the sun warmed my backside and Miles Davis kept me company with his sultry trumpet. A late afternoon of putting together a Christmas fiction and ballet classic that I know I will love for years to come left me feeling a lot more festive than I have been lately. With the addition of a fragrant tree, dragged through a snowy wood, and boxes filled with a lifetime of memories and nostalgia also added some much-needed holiday spirit to my life. If all I need to do that is a few packages of dried fruit and some bags of nuts, then holidays from now on could become much more simpler. One can only hope, anyway.
Sugar Plums
Recipe from Field Guide to Candy by Anita Chu; Quirk Books, 2009 (and Susan)
2 cups almonds, toasted and roughly chopped
1 cup dried apricots
1 cup pitted dates
1 teaspoon ground cinnamon
2 teaspoons grated orange zest
2 tablespoons orange juice
1 tablespoon honey
Unsweetened flaked coconut for rolling
1. Line a baking sheet with parchment or wax paper.
2. Combine almonds, apricots, dates, cinnamon, and zest in a food processor and process into a finely ground mixture.
3. Add orange juice and honey, and combine until the mixture becomes a sticky ball.
4. Pinch off pieces of the mixture and form into 1-inch balls. Roll in coconut. Place on the baking sheet and chill for about 1 hour until firm.
KATE’S NOTES:
I used two cups equivalent of nuts, utilizing pistachios and pecans as well as almonds. It’s my holy trifecta of nutty favorites. I might have used figs in place of dates, and on another go-round of this recipe, I probably will do just that along with dried cherries. The possibilities are endless for substitutions. Use raisins both black or gold, dried cranberries, currants, pineapple, mango. Other nuts like peanuts, walnuts, brazil nuts. Try it with lemon juice and zest for a different background of flavor.
I also added a teaspoon of ground nutmeg to the mix. Cinnamon and nutmeg are culinary best buds. They really get along so well together that it’s a shame to leave one out when the other is present.
I added a bit more honey and orange juice, as the amount in the recipe didn’t seem to be enough to make the mixture as sticky as it needed to hold together. Adjust it according to your taste preferences.

It came on as ferociously as promised and effectively shut down a large portion of the state. What a great metaphor, if you choose to see it that way. The Christmas crazies have taken hold and yet, no matter what your plan, be it a holiday party, a shopping trip, weekly youth group meetings or even dinner out, Mother Nature said ‘Not a chance, bud’ and forced us to stay in, stay warm and just sit, quiet and calmly, during what amounts to some of the nuttiest days of the year. The snow swirled around us, the wind howled and we took a small step away from the frantic pre-holiday race. Honestly, should we be forced to do this every year, I wouldn’t be one to complain.
After a few days of relative inactivity, I bundled myself up to take a chilly hike, ever aware of the need to move, to get the blood flowing and to whittle away not only the pesky excess on the body, but the loud and clamoring voices in my head that I often can’t shut off. I also wanted to see the winter landscape, to find the moments of clarity that come from a fresh snowfall when the hushed silence around us is marked only by the squeak of your boots. I needed the cold, and the cardio output. It helped immensely.
Christmas is having a hard time reaching me this year. Not particularly sure why, but given that the last 12 months have been challenging, it would suffice to say that getting festive may be the last thing on my mind. But a part of me wants to drench myself in the spirit, hauling out the decorations in an attempt to impress my mind with the full blown effects of the holiday. There is still plenty to be happy and excited about this season. We are in high anticipation of a new member imminently joining the already large clan on Mike’s side. This Christmas will be more beautiful when sharing it with someone so brand new and perfect, a simple reminder of the true reason we celebrate Christmas in the first place. Fresh promise. New hope. I should be eagerly awaiting the end of December, the turn of a new calendar page, a fresh start to another 12 month saga. I should, really. And I am. But every year is the same; I fight the despicable commercialism of Christmas, the vapid holiday music that is everywhere, and the rush, rush, rush of everyone thinking that somehow there is perfection wrapped in a package, tied up in a bow. One year when I was in college, my cousin took a trip to Europe over Christmas. I remember thinking she was crazy to go away that time of year, but now, looking back, I almost wish I could do just that. Part of me wants to just jump from here to the 31st.
My kitchen repertoire during this quick cold snap turned towards the warm and comfort angle- thick soups, pastas, a delicious meatloaf. It’s a return to the familiar, like the chill wind outside. I don’t complain about cold. It’s inevitable here in Minnesota. Dress warm, keep moving. You’ll be fine. Filling tummies with comfort and warmth is just another step in the process.
This golden and fragrant Spiced Quinoa made it’s way to our table on a dragging Friday, the end of another long week. With the warming spices of cumin and ginger- easily my favorite duo in the kitchen- the quinoa was rich in flavor, soothing to look at and warm in the belly. It easily took us from busy day to quiet evening, where all I wanted was my couch, my PJ’s and a good movie to engage my mind. It smelled fabulous. And for those frantic days ahead, this could be the easiest and least demading thing you put your energy towards. I spent more time measuring out the spices than doing anything else.
Spiced Quinoa
from the Taste for Life test kitchens
2 T. extra-virgin olive oil
1 t. each ground ginger, cumin, coriander and turmeric
1 c. quinoa, rinsed and drained
2 c. boiling water
Fresh cilantro or mint, if desired
In a medium saucepan, warm the oil and brown the spices for several minutes, stirring frequently. Add the quinoa and stir to coat with the spices. Pour in the boiling water, make sure it’s simmering and then reduce the heat to low. Cover the pot and allow to simmer, undisturbed, until the water is fully absorbed and little holes appear on the top of the quinoa. Gently pull back the grain to check for any remaining liquid but do not stir. When all the liquid is absorbed, turn off the heat and allow the pan to sit, covered, for about 10 minutes. Fluff grain with a fork before serving, and top with fresh cilantro or mint if desired. Season to taste with salt and pepper.
KATE’S NOTES:
It’s imperative NOT to stir quinoa when it is cooking. Like rice, it will get mushy if disturbed in the cooking process. One cup of the grain cooks in about 15 minutes or so at a gentle simmer. Quinoa is a perfect alternative to a rice side dish. We topped this option with chopped pepitas (pumpkin seeds). Soy nuts are also good with it, as are chopped almonds or cashews.

Pictures can be amazing, can’t they?
I sometimes surprise myself when I am going through the photos I’ve taken of my recipes. There are, without a doubt, the ones that hastily cause you to hit the ‘Delete’ key, shuddering in horror; they’re too close or too cloudy or they just don’t allow for one to discern what’s on the plate. They’re overexposed. Ugly. But those tiny slips caught in the wink of the shutter are evened out by beauties that can convey taste, aroma, and feel with one glance. The beauties that make you go ‘Wow’ and when you place them in your post, they literally tell the story without you needing to do much else. But every food has a story. Sometimes the tale tells of a feet-first plunge headlong into love with a certain food, a single bite causing your taste-buds to explode while the endorphins engulf your brain. You’re whupped and there’s no going back. Or it may be a telling of how we find a food that quietly asserts itself into our life, a slow and deliberate culinary courtship. Maybe the first exposure isn’t mind-blowing, but it isn’t a dud either. You look forward to the next time. You know there’s more to it than this. After a few meetings, the quiver in your heart starts to build and when you spy your current food crush, it’s silly how your chest seems to collapse in relief that you’ll be together again.
This past year I crushed, big time, into total infatuation with gold beets, and their greens. It didn’t take much. By routinely visiting the organic farmer at the local markets who carried these burnished lovelies and allowing them to roast to their full potential, I became fully acquainted with their earthy solid personality. We just clicked, those beets and I. It was quality time well spent. Mike gave me an enthusiastic endorsement for sauteed beet greens and we never looked back. Beets were in the recipe box, finally. We ate them so much that it was a turgid and satiated overkill. We sighed a lot during those dinner meals. Then high summer came, the corn took hold along with eggplants so shiny and purple, followed by a parade of tomatoes and zucchini and endless grilling adventures. Beets were nearly forgotten, sad as it was. But I was sold on the roasting method, and most days couldn’t even consider turning on the oven. They simply had to wait. I realized after a while that I missed them a great deal but I knew, like any solid friendship, that we would endure through our separation.
Then I found this recipe. It was the way back to my summer love of beets and caused me to drive across town just to find a bunch, greens attached, that would do this recipe justice. The moment we connected again was like any friendship renewed after absence. No lapse of time could remove the bond and the oven, once more, shared it’s warmth with my old friends and turned them soft and supple.
I was enamored…no, scratch that… bewitched by the flavors that came from this dish. It’s simple base of whole grain farro is more than capable of standing up to the lusty flavor and texture of beets and their greens, and the beets happily share their colors with the grain to diffuse the entire dish in sunshine-y warmth. Since 2007 I’ve been experimenting with whole grains, and I found farro to be an amicable and easy friend to bring into my life, a chewy and simple grain that mimics wheatberries and a heartier barley. Never mind that it was costly. Or that only one store I knew carried an affordable brand. Of all the whole grains I’ve encountered in the past two years, this one has become a good and trusted companion, steadfast, reliable and so so good for me. We all need friends like that in our lives, in both our hearts and our pantry.
The original recipe for this dish was in salad form, but for a November meal, a cold offering wasn’t going to cut it. Even with the warm sunshine that’s been poured upon us, the chill and darkness comes quickly with the descent of the five-o’clock hour, and something steaming, whether a bowl or a plate, more appropriately fits the season. I’ll revisit the salad option next Spring when the markets open again, and I can once more hone in on that stand, with the kind bearded farmer behind the table, the dirt still stuck to his knuckles. For this time of year, and especially with the brisk wind that came up after several days of that limpid sunshine, a pilaf was exactly what we needed.
Farro is not a quick grain to cook, and you’ll find many recipes call for it to be soaked ahead of time, but I’ve discovered that to be unnecessary. Washed and placed in boiling water, the grain cooks up deliciously chewy in 35-45 minutes, and once cooked to that al denté stage, it freezes really well with little loss of texture. And maybe it’s the way it is with you too, but I roast my beets or I simply don’t eat them. Call me picky, but I never met a beet I wanted to devour before being introduced to those that mellowed in the oven, swaddled in foil, and so perfectly tender that the skins slipped off with hardly any effort. Again, this isn’t quick. I made both the farro and the beets the day prior to creating this pilaf. It worked for all of us.
Farro Pilaf with Gold Beets
originally from The New York Times recipes for Health and Nutrition, March 27, 2009; adapted by Kate
3 large gold beets, roasted and diced, with greens washed, de-ribbed and rough chopped
2-3 c. cooked farro (can sub brown rice)
1 red pepper, seeded, cored and diced
2 garlic cloves, minced
1 small shallot, diced
1/2 c. crumbled feta or goat cheese
1/3 c. pecan pieces
salt and pepper to taste
{{Farro can be cooked like any other grain, with a 2:1 ratio of water to grain; 1 cup uncooked will yield the amount needed for this recipe. It should be tender to the bite, not too firm with a texture similar to barley. Be sure to rinse it thoroughly in a wire sieve prior to cooking. It can be very dusty.}}
In a deep skillet with a tight fitting lid, heat oil of choice and add red pepper, cooking for about 5 minutes. Add shallot, cooking until soft and slightly browned, maybe 5-8 more minutes. Add garlic and cook until fragrant, 30 seconds or so. Add the chopped greens and cook, stirring continually until just barely wilted. Stir in the cooked farro and diced beets. Add about 1/3 cup of water and combine. Cover the pot, turn heat to low and cook, stirring occasionally until heated fully through. Season to taste with salt and pepper. Serve topped with cheese and nuts.
KATE’S NOTES:
The mellow flavors of the beets and farro simply beg for a good salty and robust cheese. Feta is perfect, goat cheese would be great but blue cheese and gorgonzola also would work nicely.

If you saw a recipe for Nutella Swirl Pound Cake, you’d probably think like I did….
“That has to be amazing…..”
It was amazing. In fact, amazing or fantastic or decadent or incredible might just begin to scratch the surface of expectation for something with Pound Cake and Nutella in the title. If you’ve got a better description, please share it with me, preferably over a slice of this cake and some dark coffee. I could use some help in making this disappear.
I don’t make pound cakes much at all. I mean, a cake in all it’s sponge-y glory is bad enough, the butter laden, sugar sweetened lofty treat. But a POUND cake? Equal gobs of butter, eggs and sugar that all come together to create a glorious dense concoction not only tastes amazing, but can do incredible things to your thighs. And not many of them good. And with Nutella on top of all that sugar. And butter. To have that temptation around, or get my guys used to such decadence would be evil for all of us. We have no resistance, no self control. I think I’ll stick to cookies. My feet can’t possibly handle all the cardio I would need to do to work off the calories in a cake such as this. I like my waistline.
This cake came out of the oven, however, looking anything but fabulous. The top sunk, the crust was really crumbly and it seemed quite fragile. The bottom of the cake fell off as I tipped it out of the pan. But, it was utterly delicious, superbly rich and proof that even when it looks sad and forlorn, what it’s really all about anyway is how it dances across your tongue. It was so tantalizing in fact, once I was done photographing it’s sturdy swirled slices, I promptly wrapped the remainder of it tight and placed it in the freezer. If the threat of tooth-breakage looms, I won’t be so quick to indulge in a stolen bite or two. And my thighs will be pretty grateful for that. I’ll pull it out for Thanksgiving, maybe, or when there’s a need to share something that the comfort of chocolate and sugar, a close friend and a cup of tea can provide is the only requirement necessary.
Nutella Swirl Pound Cake
From Food and Wine magazine, originally by Lauren Chattman, Cake Keeper Cakes
4 large eggs, at room temperature
2 t. pure vanilla extract
1-1/2 c. unbleached AP flour
3/4 t. baking powder
1/4 t. salt
1 c. butter, softened
1-1/4 c. sugar
1 13-oz jar Nutella spread
Heat oven to 325°. Spray a 9×5 cake pan with cooking spray. Dust with flour. Fill a bowl with hot tap water and place entire jar of Nutella in it to soften. Place the eggs and vanilla in a small bowl and whisk lightly to combine. Blend dry ingredients together in another small bowl.
In a stand mixer, blend the butter and sugar on medium speed until light and fluffy, about 3 minutes, scraping down the sides at least twice. Turn the mixer to medium-low and add the egg mixture in a steady stream, stopping to scrape down the bowl once or twice. Reduce mixer speed to low and add the flour mixture, about a half cup at a time, scraping the bowl after each addition. After the last addition, blend the full mixture together for 30 seconds on medium speed.
Scrape 1/3 of the batter into the prepared pan. Smooth with a spatula. With a clean spatula, spread half the Nutella on the batter and smooth. Add in another 1/3 of the cake batter, then the remaining Nutella. Spread the last of the cake batter on the top. With a clean butter knife, swirl the batter and Nutella together to create a marbling effect. Don’t overmix the two!
Bake the cake until it’s golden on top and a toothpick inserted in the center comes out clean. Cool for 15 minutes in the pan, then turn cake out onto a wire rack to cool completely. This cake tastes excellent after spending a night in the refrigerator, wrapped tight in plastic. I don’t know why. But trust me on that.
KATE’S NOTES:
I may be labeled insane, but using the entire jar of Nutella is kind of overkill. The first issue is something I saw in all the photos of this cake across the internet, and is evident in mine. The Nutella sinks. It caused the bottom of my cake to scorch slightly, and the bottom fell off when I took the cake out of the pan. I think the same marbling affect could be achieved with less Nutella, and without the end result of it sinking. I think that the Nutella would be utilized better if drizzled over the layers of cake batter, and not swirled with a knife. This is just an opinion. I probably won’t make the cake again to see if it actually would make a difference. Although I might. If I’m desperate.
However, should the bottom of your cake fall off too, do what I did: I used a large spatula to gently scrape the stuck parts out of the pan and then I replaced them on the bottom of the cake. Once wrapped up and chilled, which I can’t recommend enough, it sort of glued itself back together. And despite how high and lofty your cake will look when it comes out of the oven, for whatever reason, it will sink. All the cakes I saw on the internet had the same sunken tops. Don’t despair. It isn’t your fault. It still tastes delicious.

November has come, and we’ve been treated to a few simply glorious days. The sunshine is most welcome here, since October winds and rain stripped the trees barren before we had our customary chance to oooh and ahhh over the coloful glory. The tone of the land is now that of bleached straw and flat brown; the deer that roam our neighborhood melt into the backdrop like a thief, vanishing in a blink.
This little guy was quite languid and uninterested in my trespassing on his sun-bathing path. He even let me stroke his leathery skin before he casually twisted his way into the leaves to continue sunning himself.
Yet even with these brilliant sunshine-y days, Daylight Savings Time and the calendar both make the late afternoons chilly, and those warm cozy meals are even more appealing.
I’m not one to think that feeling under the weather is all that productive -who does?- but on a recent day, I found myself feeling uncharacteristically blah and lacking energy to do much, which resulted in a long period of time under a blanket on the couch, a cat curled up contentedly on me while I precariously balanced my computer to occupy myself with recipe searches. An hour and a half later, I did manage, with some appropriate groaning and sighing along with the displacement of one unenthusiastic feline, to pull myself to a sitting position, and there was a stack of papers almost an inch thick on the printer that made all that time worthwhile. That’s the kind of down-time productive one can appreciate. And one of those highly anticipated papers, the best kind that float around my kitchen, papers lush with promise and anticipated flavors and not a payment of some type being sought by the outer world, this thick and comforting stew filled that early afternoon darkness with warm and intoxicating smells, a bubbling pot of seductive chunks of squash and flavorful stewed beans that managed to make me feel a lot better, at least in returning some of my energy.
Mike always knows that something wonderful is happening in the kitchen when I haul out this old and beautifully seasoned cast iron stockpot. Just dragging it out of the cupboard is quite the workout. I think if it wasn’t on a upper shelf I might not be so fearful of it.
This recipe calls for using dried beans, but rarely do I have enough foresight into my dinner preparations to put a bag of beans to soak the night before, so I used canned pinto beans instead. And although I did have to put myself through that most tedious kitchen task of peeling the acorn squash, I approached it calmly and without the usual hair-pulling hysteria that surround the words “Peel and chop one medium hard squash” Can somebody out there give me an amen? Thanks. I know I’m not the only one who despises certain culinary obligations. That probably includes soaking dried beans, since I hardly ever do it.
This recipe, with it’s canned bean option, comes together really fast if you don’t count tackling the squash. A quick saute of onion and garlic, then you stir in the rest and let it simmer until the squash is tender. When the quinoa shows you it’s adorable little curlicue thread, call out the diners to gather and spoon up a thick and fragrant bowl.
Andean Bean Stew with Winter Squash and Quinoa
from The New York Times, Recipes for Health and Nutrition, Nov. 2008
1 winter squash of choice, peeled and cut into 1/2″ chunks
2 cans pinto beans, drained and rinsed
1 medium onion, chopped
1 T. sweet paprika
4 garlic cloves, minced
1 can fire-roasted tomatoes, with liquid (use regular if you don’t have these available)
1/2 c. quinoa, rinsed well
1 bay leaf
3 T. chopped basil or parsley
In a sturdy stockpot, brown the onion in oil of choice, about 10 minutes or so. Add the paprika and stir to coat, cooking for a minute. Add in garlic and stir, cook for 30 seconds or until very fragrant. Add in tomatoes and their juice and cook for a few minutes to combine flavors. Stir in the beans and squash. Fill the tomato can with water and empty into the pot. The solids should be only just covered with liquid. This is a thick stew. Add more if necessary and put the bay leaf in the pot. Bring to a boil and then allow to simmer, covered, until the squash is tender, but not thoroughly cooked- 30 minutes or so. Stir in the quinoa and simmer until the grain is translucent and the tiny thread appears- about 10-15 minutes more. Season to taste with salt and pepper. Serve topped with basil or parsley.
This stew, like many, becomes more flavorful as it sits. It also thickens substantially. Add a little water when reheating.

Apple Crisp is so Fall, so perfectly suited for the October-November loop, and so willing to apply anyone’s simple signature to it’s luscious ingredients that it has sort of gone beyond being a favorite dessert, becoming more like that old dear friend that never fails to bring sunshine to a dreary day.
The smell of apples and cinnamon baking is a comfort that threads itself under your skin. It’s no surprise that the most popular of pies and scented candles are usually ‘Apple Pie’, long celebrated as All American and breathing remnants of home and Mom. Apple Crisp is simpler than pie, ready with a few turns of the peeler and knife, chunks of cold butter cut into crumbly flour and brown sugar to bake into a delicately scented crunch atop soft and juicy warm apples.
The addition of crystallized ginger in this recipe is wonderful; a gentle hint of warmth and a touch of it’s sweetness made the crunchy topping extra flavorful. I’ve been making Apple Crisp since I was barely old enough to see over the top of our stove, and had to stand on a chair to be able to work the peeler, my Mom by my side watching to make sure I didn’t hack off a snippet of skin here and there. She showed me how to peel an apple whole, with a long dangling strip, and how to carefully carve out apple cores and slice them uniformly so they would bake evenly. Now I have a device that peels and cuts your apples all in the turn of a crank, making any kind of apple dish quick and easy. So when I was faced lately with a chilly night and an unidentifiable need in me to seek a little comfort, a good book and a warm plate of this crisp seemed to be in order. Just taking in the first thin whiffs of the aroma seeping from the oven took the edge off whatever empty spot had formed inside. Apple Crisp was always a prominent item in our Fall kitchen, topped with cold ice cream releasing a thin river of creamy white over the still warm fruit. It’s a memory that tastes like home, if memories come with flavor which almost all of us know that they do. And maybe that night, I needed a memory to soothe me, the feeling of someone by my side watching over me. I know Mom would have loved this version as well.
I’m a nut for almonds – ha! pun intended- but there is little in terms of dessert items that I don’t think can be helped and favored by the addition of chopped almonds. For this recipe, I scattered chopped almonds over the apples in the pan before sprinkling on the topping, and also sifted the fine almond flour from the chopped pieces into the topping mixture to add even more flavor. To do so, just pour the chopped almonds into a wire sieve and shake it over whatever you wish.
Fabulous apple and almond flavor pours through every bite, whether topped with ice cream, whipped cream or yogurt……
Or not……
And yes, I did eat it for breakfast. Wouldn’t you?
Apple Crisp with Crystallized Ginger Topping
adapted from The Art of Simple Food by Alice Waters, via The Heavy Table
Kate’s Advice- Make the topping first. Your apples won’t turn brown that way.
Heat oven to 375°. Butter a 8″square baking dish, or equivalent and set aside.
For the topping:
3/4 c. AP flour
3 T. brown sugar
1 T. white sugar
2 T. crystallized ginger (I chopped mine fine- it would have been WAY chunky otherwise)
1/4 t. salt (omit if you use salted butter)
1/2 t. cinnamon
4 T. butter, cut into chunks
Mix all ingredients except butter in a bowl. Work the butter into the flour mixture with your fingers until it’s relatively chunky. Don’t mix it down to a fine sand. Chill until ready to use.
5 medium apples, peeled, cored and sliced
1 T. white sugar
1 T. AP flour
Toss apples with flour and sugar and place in baking dish. Sprinkle topping over the apples and bake for 30-40 minutes or until filling is bubbly and top is browned.

The flavors of a good curry will always be an experience that I seek fervently. I’ve learned as I’ve gotten older that more complex flavors in my mouth are highly desirable, and even a basic curry recipe can be so loaded with ample taste that it’s like fireworks on the tongue. A really good curry, as I have gathered from reading through some of my Indian cookbooks, is a process; it takes time to develop and gets better as it sits. In fact, Julie Sahni’s ‘Classic Indian Cookbook’ is full of recipes that simmer and bubble slowly over hours, and then goes on to say something to the extent of “Cover your pot and allow to sit for two hours or more, preferably overnight to create a deeper flavor.”Whoa now.
My love for a good curry dish is too high, too frenetic and too enthusiastic to consider making something such as Julie’s amazing dishes, then forcing myself, with a household of warming spices permeating every surface, to put aside the final product and WAIT to eat it. I may have patience for many things in life, such as a good loaf of bread, Spring to follow Winter and the ending of a long and complicated novel, but curry indulgence is not something I can set in the fridge, ignore and go about my business. When that baby is done and ready, I want to dig in. I want to indulge, feel the play in my mouth and the warmth filling every corner of my stomach and soul. Maybe in another life I was born to a land of coriander and ginger, soothed with the brightness of turmeric and weaned on cumin. How else would I have such a cuisine so infused in my blood? I’m a white girl with blue eyes, but place the aromatic Indian spices in front of me and I turn golden like a cheetah, speeding to pounce in delight on my meal.
A quick fix is always a good thing among the tried and true, slow creations hidden in the pages of any Indian cookbook. This recipe for highly pungent -and fast cooked- Curried Chickpeas has the warm spices of those stalwarts without the long waiting period. Now I could have used dried chickpeas for a slight flavor edge but in a pinch, for this eager mouth to devour, the canned are a perfect choice. It was barely 15 minutes from start to finish, and a steaming aromatic bowl of tiny, golden infused orbs sat on my counter. One bite and they ‘POW’d and ‘ZING’d their way to every one of my taste buds, delighting me and easing the need for some kind of spicy fury on my fork. Not overwhelming, and certainly not one to make my eyebrows sweat -a sure sign of potent heat- but again with the subtle means of infusing curry to the deepest layer of my skin. And fast. With a deep breath of relief, I was soothed once again.
Curried Chickpeas
From The Los Angeles Times, 10/21/09
1 medium onion, diced
1 t. turmeric
1 t. coriander seed
1 t. cumin seed
1/2 t. cayenne pepper
2 15-oz cans chickpeas, drained and rinsed
2 T. chopped cilantro (more to taste)
1 T. each fresh squeezed lemon juice and zest (lime would work fine, in fact I think it might be better)
With a mortar and pestle, or a spice grinder, crush the coriander and cumin seed into coarse powder.
In a saute pan, heat oil of choice and add onions over medium-high heat. Saute onion until deep golden brown and crispy, about 8-10 minutes, stirring frequently. Add the turmeric, coriander, cumin and cayenne. Cook, stirring frequently until aromatic and toasted, about 2-3 minutes. Stir in the chickpeas, cilantro and lemon juice. Cook, stirring occasionally for about 10 minutes to allow the flavors to develop. Remove from heat and taste. Season with salt if desired. Allow to cool, transfer to a container and chill prior to serving. Adjust lemon juice and seasoning if you wish.
KATE’S NOTES:
I like the fresh flavors of using whole coriander and cumin seed in recipes. If you don’t keep a mortar and pestle, or spice grinder on hand, use pre-ground spices in the same quantity.

I really need to make more of it. Time that is, especially when I can get this……
for something like 15 minutes of actual work; like getting my hands messy, watching the mixer spin and covering a bowl with plastic kind of work. Whoa. I’m exhausted just thinking about it.
But really, I should do this more often.
Maybe it’s because I don’t think bread photographs all that well. Like soup. I can make soup once a week but you rarely read about it here because it isn’t all that glamorous and hates to pose when the camera comes out. Some foods you can’t keep down if you tried. The camera turns on and they pose the heck out of themselves, flashing their merits for the lens to find, almost shouting ‘Look at me!!’ in their desire to be seen. And loved. Bread is just sort of there. The color isn’t superb and eye-catching; you can’t really show off the crumb in any photo and there’s no flashy edges, roasted and burnished, that tell it’s tale. And it’s bread. It’s a vehicle for your cheese, peanut butter, jam or fruit butter. It gets smothered in mayonnaise. No wonder it just sits there when the camera comes out. Rarely is bread honored on it’s own, although some of the best breads I have ever eaten can offer up their finest attributes with nary a spread in sight. But let’s face it. When you go for bread, you almost always have the thought of placing something on it, covering it up and hiding it from view, mashing it down in a press, or cooking it over a flame. Maybe over time, bread has developed somewhat of a complex, and when the camera points its way, it probably sighs and thinks ‘Oh great, next it will be the peanut butter jar. Or that god-awful mayo crap. Or that fabulous sharp cheddar in the fridge, maybe with chutney.’ It’s time to behold the bread. To claim it for the amazing food that it is, to place it forefront in the kitchen, to give it it’s due. To make time for it. To take 21 pictures of it like I did in an exhaustive effort to bring out the best of it, to try to make it shine. As I tapped ‘Command + Delete’ over and over again, sighing in frustration, the coarse and hearty crumb of this bread still playing on my tongue, I decided that the bread just needed to tell it’s own story in the only way it could. It needs to be made to be appreciated.
For five years of my life, I worked in the office of an artisan bakery and was subjected daily to fresh baked bread of all shapes, sizes and flavors. Some days all I could manage for lunch was to grab a ciabatta roll and maybe a little ham. Sometimes it was a Sesame Semolina loaf, a snappy and crisp Baguette or the mouth-puckering Sourdough Boule. My desk usually would be covered in crumbs, and when I cleaned out my keyboard, yep- you guessed it- crumbs. My daily log book was filled with crumbs. They crunched under my shoes, and almost every day as I exited the building and passed the rack of breads that were left, I would grab one to take home for Griffin. But I was surrounded by the wonder of all things yeast and it cemented a love for bread in me that lives strong still, nearly eight years after I left the job. I never really thought about how fortunate I was then, but now, when I want something yeasty, that snaps with a shower of golden snowy crumbs all over my lap, that’s what I think about.
And I need to give it the time and attention it should have, time it deserves and way more than I do, which is a rarity. Even if most of that time is spent gazing at a plastic covered bowl, faint drafts of yeast and flour emitting from within, while I sigh heavily, dreaming of warm bread covered with melted butter, a drizzle of honey or a gooey slice of melted Brie. The warmth of a 400° oven easily chases the chill of an October Sunday away, while I doze through the NFL game, one synapsis just awake enough to keep track of the time passing and bringing me ever closer to those dark brown loaves. And the smell. God really knew what He was doing when He created bread, didn’t He? Somebody say ‘Amen’.
Whole Wheat Multi Grain Bread
From The Essential Eating Well Cookbook
1-3/4 c. whole wheat flour
3/4 c. bread flour
3/4 c. 7-Grain cereal (Bob’s Red Mill makes a delicious one)
2 T. milk powder
1 pkg. active dry yeast (2-1/4 tsp.)
1-1/4 t. salt
1-1/3 c. water
2 T. molasses (I did not have any, subbed in unsw.applesauce and loved the result)
1- 1/2 T. canola oil
Fit your Kitchenaid mixer with the dough hook. Spray a medium bowl with cooking spray and set aside.
Combine flours, cereal, milk powder, yeast and salt in the mixer bowl and blend on low speed for about a minute. Whisk together the water, molasses and oil until combined, and then with the mixer running on low, slowly pour the liquids into the flour mixture. When fully combined, stop the mixer and allow the dough to rest in the bowl for 30 minutes.
Turn the mixer on to low again, and mix the dough for about a minute stirring in about 2 more tablespoons of wheat flour. The dough will not form a ball and will be slightly sticky. Scrape the dough into the prepared bowl and cover the top with plastic. Allow to rise until doubled in size- 1 to 1-1/2 hours.
Coat a standard loaf pan with cooking spray. Turn the dough out onto a lightly floured surface, and sprinkle a little more flour over the top. Carefully collect the dough together to form a loaf and place in pan. Cover with plastic and let rise until doubled in size, 50 minutes to an hour.
Bake at 400° for 35-40 minutes, until top of loaf is golden brown and there is a hollow sound when you tap on the top. Allow to cool in pan, then turn out onto a wire rack to cool completely before slicing.
KATE’S NOTES:
Bob’s Red Mill makes a 5-Grain, 7-Grain and 10-Grain cereal mix. Although the recipe calls for the 7-Grain, I used the 10-Grain as it was what I had on hand. Either of the three varieties would work just fine in the proper quantity. I was a little skeptical about the amount of time the dough mixed after the rest period. It seems pretty short and does not seem to develop the gluten much like other methods. However, the result of the loaf tasted really good, with a dense and coarse multi-grain crumb and a nice texture. I might experiment with the amount of mixing time to see what the end result might be. I doubled the recipe and both loaves were a bit short but I might have baked them sooner than they should have though.
